Ingredients For slow cooker beef and cabbage soup

  • 1 lb
    ground beef
  • 1 md
    onion, chopped
  • 3 c
    cabbage, chopped
  • 1 c
    frozen green beans
  • 1 c
    celery, chopped
  • 1/4 md
    green bell pepper, chopped
  • 1/4 md
    red bell pepper, chopped
  • 1 c
    carrots, chopped
  • 2 can
    diced tomatoes with basil, garlic & oregano, (14-1/2 oz. each)
  • 1 can
    italian tomato paste (6 oz)
  • 1 tsp
    italian seasoning
  • 1-1/2 tsp
    minced garlic
  • 4 c
    water, boiling
  • 1 Tbsp
    beef base (such as minor's)
  • salt and pepper, to taste
  • 1 c
    minute rice, uncooked

How To Make slow cooker beef and cabbage soup

    Brown ground beef in a skillet until cooked through; drain.

    Place beef in a 6-quart slow cooker. Add onions, cabbage, green beans, celery, bell peppers, and carrots; mix well.

    Add diced tomatoes, tomato paste, Italian seasoning, and garlic.

    Add beef base to the boiling water, stir until dissolved. Pour over ingredients in slow cooker. Season with salt and pepper. Mix well.

    Cover and cook on "high" setting for 4 hours, or "low" setting for about 8 hours.
  • 6
    During the last 20 minutes of cooking, stir in Minute rice. Cook until rice is done. Season with additional salt and pepper, if desired.
