1 Pkgdry lentils

2 mdyellow onions

4carrots

1bay leaf

1 pkgcleaned fresh spinach

1/2 boxcooked ditalini pasta

1/4 cparmigiano-reggiano, grated
How To Make sicillian lentil soup

1Soak lentils in cold water and remove skins that come to the top. Peel the carrots and dice.Add all ingredients (except pasta and cheese)to a large pot, bring to a boil then cook on low heat for 1 1/2-2 hours.

2Once the soup is ready add the cooked pasta, blend and add the grated cheese to top it off.
