I always start to think of soups when the leaves begin to fall and the shadows grow longer. Here's a great little seafood soup that is one of my family's favorite.

Ingredients For shrimp and artichoke soup

  • 1 sm
    onion
  • 2 clove
    garlic(minced)
  • 1/2 c
    red bell pepper
  • 1/3 c
    butter
  • 1 pt
    half and half
  • 1 can
    cream of mushroom soup
  • 2 jar
    marinated artichoke hearts(small jars)
  • 2-3 lb
    peeled and deviened shrimp
  • 1 pkg
    lump crab meat
  • salt and pepper to taste

How To Make shrimp and artichoke soup

  • 1
    Chop onion,garlic and bell pepper and saute in butter until onions begin to turn clear. Add mushroom soup and begin adding half and half until soup has a creamy texture(not too thick or not too thin). Cook on medium heat for about 10 minutes or until vegetables are tender. Add artichoke hearts salt and pepper. Cook 5 more minutes. Add shrimp and crab meat and cook 5 minutes. Serve with warm crusty bread.
