Ingredients For sherry pea soup

  • 2 c
    chicken or vegetable stock
  • 3 c
    green peas, thawed
  • 1/2 tsp
    salt
  • 1/2 tsp
    white pepper
  • 1 tsp
    sugar
  • 1 c
    milk
  • 1/3 c
    sherry
  • fresh parsley leaves

How To Make sherry pea soup

  • 1
    Combine the stock, peas, salt, white pepper, and sugar in a pan. Bring to a boil and cook for about 10 minutes.

    Pour the mixture into a blender or food processor. Process until smoothish. strain through a fine mesh strainer pushing the solids to extract all the flavor out of it. Discard the solids.

    Place the soup back into the pan and add the milk and sherry. Bring back to a boil and let simmer for about 5 minutes Serve garnished with parsley, mint, or basil.
