I LOVE SOUP ! This is fragrant from the garlic and onions, and the broth is smokey and sweet from the tomatoes, smoked sausage, and kale !!This soup is light enough for summer and hearty enough for fall and winter ! A year 'round favorite of my family !!

Ingredients For sausage and kale soup

3 mdred potatoes, peeled and cut into chunks

1 mdonion, chopped

2 Tbspolive oil

1 lbfresh kale, chopped

4 cloveminced garlic
-
32 ozchicken broth
-
1 lbsmoked kielbasa sausage, sliced into 1/4- inch slices

1 can(15 ounces) white beans
-
1 can(14-1/2 ounce) diced tomatoes, undrained

2bay leaves

salt and pepper, to taste
How To Make sausage and kale soup

1In a dutch oven, add olive oil. Cook onions, and potatoes for 5 minutes, stirring occasionally. Add kale and garlic and stir. Cover and cook for 7-10 minutes until kale is wilted.

2Add the remaining ingredients and bring to a boil. Reduce heat, cover and simmer for 15-20 minutes. Add salt and pepper to taste
