Ingredients For sassy sausage & bean soup

  • 1/2 c
    chopped onion
  • 2 tsp
    minced garlic
  • 2 Tbsp
    olive oil
  • 6 oz
    sundried tomato & chicken sausage, such as from al fresco, sliced into 1"-slices
  • 1
    15 oz can small white beans, drained
  • 1/4 c
    finely chopped red bell pepper
  • 1
    15 oz can black beans, drained
  • 1 tsp
    dried oregano
  • 2
    14.5 oz cans reduced-sodium chicken broth
  • 2 c
    escarole, trimmed and chopped.

How To Make sassy sausage & bean soup

    In lg dutch oven or lg pot, over med-high heat, Cook onions and garlic in oil, cook 2 min. Add sausages and cook, stirring for about 4 min, or until they are browned. Stir in remaining ingredients. Put on high, bring to a boil. Reduce heat to medium and simmer about 10-15 min, or until sausages are fully cooked and soup is heated through.
