1 smonion

3 ozvegetable stock

1/2 cheavy cream

3/4 cshredded swiss cheese

1/4 cshredded gruyere cheese

1 Tbspprepared horseradish

How To Make roasted broccoli swiss soup

1Preheat oven 375 degrees. lay the broccoli out on a baking sheet and drizzle with 1 tbsp olive oil. Season with salt and pepper. Roast in oven about 20 minutes stirring once. Set aside

2In a large pot add the remaining tbsp olive oil and butter. Add the onion and garlic and cook 2 to 3 minutes. Whisk in the flour. until it turns golden

3Add the stock and heat until boiling. Stir in the heavy cream then add the broccoli and cheeses. Stir constantly until the cheese melts. Cook 10 minutes. Stir in the horseradish and season with salt and pepper
