So many people have never heard of Potato soup....I find it can be versatile and filling, as well as inexpensive and YUMMY. My in-laws RAVE at my Potato soup recipe!

Ingredients For rikki's potato soup

  • 5-7 lb
    potatoes, peeled, and quartered * or cut into about 1" cubes
  • 1 md
    sweet onion, diced
  • 8 oz
    cream cheese
  • 8 oz
    sour cream
  • 3 stick
    butter
  • 1 c
    heavy whipping cream
  • salt and pepper to taste
  • ADD IN SUGGESTIONS
  • 1/2 c
    crumbled bacon
  • 1/2 c
    shredded cheese
  • 1/2 c
    cubed ham
  • 1/2 c
    velveeta cheese
  • 1/2 c
    whole kernel corn

How To Make rikki's potato soup

  • 1
    Cook potatoes and Onion in enough water to cover until potatoes are tender, do not drain....unless you want a thicker soup
  • 2
    add butter, and cream cheese...stir constantly, until blended.

    Add sour cream, Heavy Whipping cream, salt and pepper and any add in you desire...or None at all! heat through and enjoy!
