This is a quick soup and an easy way to use up leftover rice.

Ingredients For rice & tomato soup

1 cancrushed tomatoes (large can)

1/2onion, chopped

1 Tbspsugar

2 cboiling water

1/2bay leaf

1 tspsalt
-
1/4 tsppaprika
-
1/8 tspbaking soda
-
2 Tbspbacon fat
-
2 Tbspflour
-
1/2 ccooked rice
How To Make rice & tomato soup

1Simmer tomatoes, seasonings, and water 1/2 an hour; discard bay leaf and press through a sieve.

2In the small pan add baking soda, bacon fat and cook with the flour until brown; add to the soup, stir until smooth. Add rice and serve.
