This is a pretty quick way to make tomato soup. If you have a little more time, you can use 8 tomatoes, peeled, cored and blended smooth instead of tomato juice.

Ingredients For quick homemade tomato soup

  • 2 c
    tomato juice
  • 3 c
    low fat milk (skim, 1% or 2%)
  • 3 Tbsp
    cornstarch
  • 1 tsp
    basil, minced
  • plain, unsweetened yogurt or low-fat sour cream for garnish
  • whole basil leaves, for garnish
  • 1
    green onion, sliced for garnish

How To Make quick homemade tomato soup

    Place all ingredients in a dutch oven. Heat until boiling, then lower heat. Stir constantly while simmering until thickened. (If too thick, use a little water until desired consistency!)
