This is a pretty quick way to make tomato soup. If you have a little more time, you can use 8 tomatoes, peeled, cored and blended smooth instead of tomato juice.

3 clow fat milk (skim, 1% or 2%)

3 Tbspcornstarch

1 tspbasil, minced

plain, unsweetened yogurt or low-fat sour cream for garnish

whole basil leaves, for garnish

1green onion, sliced for garnish
How To Make quick homemade tomato soup

1Place all ingredients in a dutch oven. Heat until boiling, then lower heat. Stir constantly while simmering until thickened. (If too thick, use a little water until desired consistency!)
