Ingredients For quick and easy cabbage and bean soup

  • 3 c
    vegetable broth
  • 3 c
    water
  • 3 or more c
    red or green cabbage, chopped
  • 3
    carrot, sliced
  • 3
    celery ribs, chopped
  • 3 to 4 clove
    garlic, minced
  • 1
    medium onion, chopped
  • 1 tsp
    better than bouillion garlic base
  • 1 tsp
    better than bouillioin seasoned vegetable baseed vegetable
  • 1 can
    white beans
  • 1 Tbsp
    apple cider vinegar (optional)
  • 1/8 tsp
    red pepper flakes (optional)

How To Make quick and easy cabbage and bean soup

    add all but the beans and vinegar, if using, to a soup kettle and simmer till veggies are tender.

    During the last 10 minutes or so, add in the beans and vinegar. Taste before adding salt or pepper. Add whatever other spices or herbs you might like.. It's especially good with a little dill added..

    serve it with a nice salad and some grainy bread for a delicious, nutritious and satisfying lunch or supper..
