Ingredients For potato leek soup

  • 2 Tbsp
    melted butter
  • 3
    medium leeks, cut into 1/2 pieces
  • 1 Tbsp
    flour
  • 2 can
    (13-3/4 ) ounce chicken broth
  • 2 c
    water
  • 1 lb
    potatoes, peeled and diced into 1/2 cubes
  • 1 tsp
    salt
  • 1/2 tsp
    pepper

How To Make potato leek soup

  • 1
    Place butter in a 3 or 4 quart saucepan. Add leeks. Saute over a low heat, stirring often, until they soften. Add flour. Continue cooking, stirring constantly, until mixture thickens. Slowly add the broth and water. Increase heat and cook until simmering. Add the potatoes and seasonings. Cover.

    Simmer an additional 30 to 40 minutes. or until leeks and potatoes are tender.
