It's mid-March, my thoughts are turning green! As in St. Patrick! This is a great St. Patrick's Day recipe.

Ingredients For potato cabbage soup

  • 1 1/2 qt
    water
  • 1 lg
    onion, chopped
  • 4 lg
    potatoes, quartered
  • 1 Tbsp
    salt
  • 1 lb
    cabbage, shredded
  • 1 1/2 Tbsp
    butter

How To Make potato cabbage soup

  • 1
    Combine water, salt and onions in a large saucepan. Bring to boil. Add potatoes. Cook until tender.

    Remove and mash potatoes. Return to pot.
  • 3
    Add cabbage and butter. Simmer an additional 20 to 30 minutes.
