It's mid-March, my thoughts are turning green! As in St. Patrick! This is a great St. Patrick's Day recipe.

Ingredients For potato cabbage soup

1 1/2 qtwater
-
1 lgonion, chopped
-
4 lgpotatoes, quartered

1 Tbspsalt

1 lbcabbage, shredded

1 1/2 Tbspbutter
How To Make potato cabbage soup

1Combine water, salt and onions in a large saucepan. Bring to boil. Add potatoes. Cook until tender.

2Remove and mash potatoes. Return to pot.

3Add cabbage and butter. Simmer an additional 20 to 30 minutes.
