Ingredients For plain ole vegetable soup (sallye)

4 mdrusset potatoes

2celery ribs

1 mdwhite onion

1 canhunts fire roasted diced tomatoes (28 oz)

1 canhunts tomato sauce (8 oz)

1 pkgmixed vegetables (10-16 oz)

2 Tbsplow sodium chieken bouillon

2bay leaves
-
1 Tbspchili mix (link to recipe below)

1 Tbspsea salt

1 Tbspground pepper
-
2 qtwater
-
1/4head of shredded cabbage (optional)

1 Tbspcorn starch (optional)
How To Make plain ole vegetable soup (sallye)

1Peel and dice potatoes into bite sized pieces Place celery and onion in food processor and pulse until finely diced Shred cabbage if you plan to use

2Place water, bouillon and spices in heavy saucepan, bring to a boil Add tomatoes and tomato sauce, bring liquid back to a boil Add potatoes, celery and onions to boiling water mixture

3Turn heat down to medium and simmer for approximately 20 minutes

4Place package of mixed vegetables in microwave and cook covered for about 3 minutes Add to soup mixture. If you plan to include cabbage, add it at this time

5Taste test and adjust seasonings accordingly. If soup hasn't thickened up, mix cornstarch with just enough water to make a thin paste and add to soup

6Simmer for 10-15 more minutes until vegetables are tender.

7Good served with hot cornbread or grilled cheese sandwiches
