When we had left over baked potatoes in the restaurants, we would use them for this at times.

Ingredients For peggi's baked potato soup

  • 4 lg
    baked potatoes
  • 2/3 c
    melted butter,
  • salt & pepper
  • 2/3 c
    flour.
  • 6 c
    milk
  • 4
    green onions, chopped fine
  • 10 slice
    bacon, cooked & crumbled
  • 2 clove
    garlic, minced
  • 1 1/2 c
    shredded cheese
  • 8 oz
    sour cream

How To Make peggi's baked potato soup

    SCOOP OUT INSIDES OF BAKED POTATOES. SET ASIDE.

    COOK UNTIL SMOOTH (ABOUT 1 MINUTE), MELTED BUTTER, SALT & PEPPER, FLOUR.

    ADD MILK.

    COOK BACON, ALONG WITH GARLIC IN SKILLET.

    TO THE BUTTER MIXTURE, STIR IN: THE POTATO INNARDS, GREEN ONIONS, BACON MIXTURE, & SHREDDED CHEESE.

    COOK ON MEDIUM HEAT UNTIL FLAVORS ARE MARRIED TOGETHER, ABOUT 10-15 MINUTES.

    ADD SOUR CREAM LAST & REMOVE FROM HEAT.
