3purple or red onions, sliced

3white onions, sliced

4-5 cmustard greens

4 cchicken or turkey broth

6 cwater

2 Tbsptarragon

1 Tbspparsley

1 tspherbes de provence (optional)

1 Tbspgarlic, chopped

1 cwine

2 Tbspbutter

1 Tbsppaprika

2 Tbspdijon mustard

1/2 tspcayenne

2 cmilk

salt and pepper to taste
How To Make parisienne onion and mustard green soup

1Place all the ingredients in a tall pot, save the milk. Bring to a boil, then simmer.

2Simmer for a couple hours or until the soup reduces to half the original amount. Stir occasionally.

3Then stir in milk. Cook for an additional half an hour on low.
