Ingredients For okra ratatouille

2 Tbspolive oil

1clove garlic

1 smonion thinly sliced

1 smzucchini cut in 1/4 inch rounds

12pods okra cut in 1/2 inch rounds

1red tomato diced
-
1fresh stem organe
-
2steams thyme
-
salt and ground black pepper
How To Make okra ratatouille

1In a large skillet with deep sides, heat the olive oil over medium heat.

2Add the onion, garlic and cook stirring often until onions are softened 3 to 4 minutes. Add okra and tomatoes stir until coated with olive oil cook 5 minutes

3Stir in the herbs and season with salt and freshly ground pepper. Lower heat and cook until okra is tender 6 to 8 minutes.
