1medium carrot,diced

1medium onion,diced

2stalkscelery, diced

1 ccherry tomatoes halved

1yellow squash cut crosswise and sliced

1zucchini cut crosswise and sliced

8 cwater

2chicken bouillon cubes

16 ozcauliflower riced

grated pecorino romano cheese for sprinkling
How To Make nonnas squash soup cauliflower rice

1Put a large stock pot over medium flame heat the oil.

2Add the carrots onions and celery and cook until the onion is translucent and the vegetables soft about 5 to 7 minutes

3Add tomatoes to the pot and cook until softened about 3 to 5 minutes

4Add the water and the bouillon cubes and where is your heat to high bring to a boil and add in the squash and zucchini cook for five minutes and add in the cauliflower cook until the squash and zucchini or tender about another five minutes
