I love Gazpacho, and this is my favorite way of preparing it. It makes a very refreshing - and surprisingly filling - summertime dinner!

Ingredients For my very favorite gazpacho

2 clovegarlic, peeled, minced and smashed

1 Tbspwhite sugar

1 and 1/2 tspsalt

1 cantomato juice (46 oz.)

1/4 cextra virgin olive oil, or vegetable oil

2 Tbsplemon juice
-
1 tspworcestershire sauce
-
3tomatoes, finely chopped
-
1cucumber, peeled and diced
-
1green pepper, finely diced
-
1/4 cthinly sliced green onion

1/2 ccelery, very thinly sliced
How To Make my very favorite gazpacho

1Combine garlic, sugar, salt, tomato juice, oil, lemon juice and Worcestershire sauce. Place in blender and whirl for a few seconds to combine well.

2Stir in vegetables. Cover and chill for several hours. Will keep 3 to 4 days in the refrigerator. *I sometimes set out small bowls of chopped avocado, additional cucumbers and tomatoes, and sour cream to dollop on top, if desired.
