Ingredients For mushroom miso soup

  • 4 oz
    mushrooms sliced
  • 1 c
    chopped bok choy
  • 1 lg
    egg whisked
  • 2 Tbsp
    green onions chopped
  • 4 c
    vegetable broth
  • 4 Tbsp
    miso paste

How To Make mushroom miso soup

  • 1
    Place broth in sauce pan. Bring to a boil. Take about 1/2 cup broth and add the miso paste stir until dissolved then add back to pot. Add the mushrooms and bok choy and cook 5 minutes. Slowly drizzle the egg into the broth while whisking. Remove from heat and garnish with green onions.
