Ingredients For mushroom and sherry noodle soup

  • 8 oz
    mushrooms chopped
  • 1 Tbsp
    olive oil
  • 2 clove
    garlic minced
  • 6
    green onions white and green parts separated
  • 6 c
    chicken stock
  • 4 Tbsp
    dry sherry
  • 1 c
    rice noodles cooked according to package directions

How To Make mushroom and sherry noodle soup

  • 1
    Add the oil to a large pot. Saute the white parts of the green onions, garlic and mushrooms. Cook 5 minutes.

    Add the chicken stock and sherry and bring to a boil. Reduce to a simmer and simmer 5 minutes. Add the noodles. Cook 1 more minute. Serve garnished with the green parts of the green onions
