My husband's mother makes the BEST potato soup! Every time she makes it for us, I eat it until I hurt!

Ingredients For mom's potato soup

2-1/2 lbwhite potatoes
-
1/2 stickbutter
-
1/2medium onion, chopped
-
3stalks of green onions
-
1/2 tspblack pepper
-
2 cchicken broth
-
1-1/2 to 2 chalf & half
-
1/2 tspgarlic, minced
-
bacon bits
-
cheddar cheese, grated
-
salt, to taste
How To Make mom's potato soup

1Peel, cube and boil potatoes. Drain potatoes and return to pot.

2Saute onion and garlic in butter until soft. Add onions and garlic to potatoes.

3Bring to boil over medium high heat. Add chicken broth. Mash/blend until slightly lumpy.

4Gradually add half & half while on low heat. Stir often for about 30 minutes. Add salt to taste.

5Garnish with green onions, cheese, pepper and bacon bits.
