Ingredients For mississippi broccoli cheddar soup

  • 1-2
    heads of broccoli, steamed
  • 4 can
    cream of broccoli or cream of mushroom soup
  • 1 can
    chicken broth
  • 2 can
    water
  • 1 c
    half and half
  • tony chacheres creole seasoning to taste (optional)
  • 2 Tbsp
    chopped fresh chives
  • 2-3 Tbsp
    butter
  • 1 tsp
    curry
  • 1 c
    uncooked white rice
  • 3 c
    cheddar cheese. more or less to liking

How To Make mississippi broccoli cheddar soup

  • 1
    Break up part of broccoli into small chunks and take the other half and puree into smoothie consistency.

    Mix broccoli and broccoli puree with other ingredients in a large pot, except cheese. Bring to a boil and let simmer on low until rice is tender. Add cheddar while soup is hot.

    Serve with texas toast or any kind of garlic bread. Also very good garnished with croutons.
