My father was a wonderful cook and I cherish all the time we spent together in the kitchen. He made several homemade soups and this is one of my favorites.

Ingredients For minestrone soup

2 slicebacon, diced

2 clovegarlic, minced

1 lgonion, chopped

4 qtchicken broth
-
2 cspaghetti, broken into pieces

2potatoes, diced

4carrots, sliced
-
2 ccabbage, sliced

1/2 ccelery, diced

1 cantomato sauce
-
1 cankidney beans, drained

1 canchic pea, drained
-
2 tspsalt
-
1/2 tsppepper
-
1 Tbspparsley, chopped

1/2 cgrated cheese
How To Make minestrone soup

1Cook bacon in soup pot, add garlic and onion and cook until tender. Add broth, pasta, potatoes, carrots, cabbage, celery, and tomato sauce. Bring to a boil and simmer 15-20 minutes, or until vegetables are just cooked. Add kidney beans, chic peas, seasonings and parsley. Cook 5 minutes longer. Add cheese, stir and serve.
