My sons and I were hungry for Potato Soup, one afternoon, so I invented this recipe. Hope you all enjoy it!

Ingredients For leslie's easy potato soup

6-8 mdpeeled,cubed potatoes

4 Tbspbutter

1 Tbspolive oil
-
1 tspchicken bouillon granules

1/4 tspcelery powder
-
2 tspchives, chopped
-
1/2 tsponion powder
-
1/2 conion chopped

1 pkgbacon bits or
-
1 ccooked cubed ham
-
1 cwater
-
1 cmilk
-
2 cheavy cream
-
salt and pepper to taste
-
1 ccolby jack, or mild cheddar cheese
How To Make leslie's easy potato soup

1Melt butter in fry pan or heavy 3 quart sauce pan. Add olive oil, potatoes,celery and onions. Saute until onions are transparent and celery is almost tender.

2Add the water,bullion, celery powder, onion powder, bacon bits,and chives. Cover and cook over medium heat, stirring often, until potatoes are tender.

3Stir in heavy cream and milk. Simmer over low heat until soup is hot. Stir in 1 cup shredded Colby Jack cheese, salt and pepper to taste.

4Thicken, if needed with flour or cornstarch.

5If you're short on funds, milk can be used in place of heavy cream. Just thicken.
