lc zuppa toscana
If this is one of your favorite soups like it is mine - this is a must try for you! You will not be disappointed in the least. When the radish cooks, the texture and flavor changes - it mellows out and the texture is more like a yukon gold potato.
Here is the best part - you are making this soup healthy! By making the small switch of radish and chard, you are taking this soup from a whopping 51g net carbs to 3.9g net carbs!! I wanted to jump for joy when I got the result of switching the ingredients.
Enjoy in good health (:

How To Make lc zuppa toscana
-
1Note:
I want to suggest peeling the radishes. I know it takes a little more time - but it occurred to me after I pulled the from the garden and was washing them and putting them in a white bowl that the water was tinged with red. I would be afraid you will end up with pink soup - so unless that is your goal...peel the radishes! -
2Brown the Italian Sausage in a large dutch oven. Remove and drain any residual grease.
-
3Add chicken broth, garlic, onion, radishes, salt, and pepper. Cook until veggies are tender on medium heat, about 30 minutes.
-
4Add sausage and chard to broth. Cook until chard has wilted about 5 minutes.
-
5Turn off heat and add cream. Stir to combine.
-
6To serve:
Ladle in bowls and garnish with crushed red pepper and parmesean cheese. Enjoy - guilt free - except for not telling your guest they are eating radishes instead of potato - lol -
