1 lgonion, sliced into rings

4garlic cloves--finely chopped

1/4 tspred pepper flakes

1 cancannellini beans--rinsed & drained

3 cchicken broth--fat free

2 cwater

1/4 tsporegano--dried

salt & pepper to taste

2 Tbspparmesan cheese
How To Make kale & white bean soup

1WASH KALE WELL, REMOVE LEAVES FROM STEMS & DISCARD STEMS. TEAR LEAVES INTO PIECES. SET ASIDE

2HEAT OLIVE OIL IN HEAVY PAN OVER MEDIUM HEAT & SAUTE ONION RINGS STIRRING OCCASIONALLY UNTIL IT BEGINS TO CARMELIZE (15 MINS OR SO)

3ADD GARLIC & PEPPER FLAKES & SAUTE MIXTURE ANOTHER MINUTE.

4ADD BEANS, BROTH, WATER & OREGANO, BRING TO SIMMER

5ADD KALE & SIMMER UNCOVERED, STIRRING OFTEN UNTIL DONE. SEASON WITH SALT & PEPPER. I LET THE SOUP SIMMER FOR ALMOST AN HOUR ON LOW HEAT BEFORE SERVING.

6SPRINKLE PARMESAN ON TOP OF SOUP BEFORE SERVING IF SO DESIRED.
