Ingredients For kale soup

  • 1 lb
    kale
  • 5
    potatoes, peeled
  • potato cooking water, drained from cooking the potatoes
  • 2
    onions, chopped
  • 1 lb
    chourico, sliced (portuguese sausage)
  • salt and pepper, to taste

How To Make kale soup

  • 1
    Wash kale well and cut up into very small pieces.
  • 2
    Parboil potatoes in enough water to cover. Cube.
  • 3
    Add kale, onions, and chourico. Let simmer for an hour or longer, adding more water as necessary.
  • 4
    Season with salt and pepper.
