Miso soup has got to be one of the easiest soups to make. It has very few ingredients and is very healthy. I make mine year round because it's good warm as well as at room temperature.

Ingredients For home made miso soup

4 cvegetable broth (low sodium)

4 cfiltered water
-
4 lgscallions, chopped
-
2/3 cmellow white miso (miso master organic)

2sheets nori, cut in fine strips
-
1block firm tofu cut in cubes
-
1 Tbsptamari sauce
-
1 tspsesame oil
-
4white button mushrooms, sliced
How To Make home made miso soup

1Add the vegetable broth and water to a large soup pot. Stir to combine.

2Add the green parts of the scallions and the chopped mushrooms.

3Bring to a boil and simmer for 5 minutes.

4Add the miso and stir to dissolve it. Add the rest of the ingredients and give a good stir. DO NOT BOIL! It will change the flavour and destroy the healthy properties of the soup. If you must heat it do it on low.
