Ingredients For ham & potato soup

2 ccountry ham
-
1 ccelery, chopped
-
2 ccarrots, diced
-
1/2 conion, diced
-
4 clovegarlic, finely chopped

5 mdpotatoes, cut into large bite size pcs.

4 cchicken stock, homemade or low-sodium
-
1 tspthyme
-
1 tspblack pepper
-
1/4 cmasa for thickening
-
6 sliceamerican cheese, opt
How To Make ham & potato soup

1Place onion, celery, carrots, garlic and ham in large soup pot with about 1 tbls of olive oil. Simmer till veggies are tender. If using leftover ham, add once veggies are tender.

2Add chicken stock to pot and spices bring to a boil, reduce heat and add potatoes. Cook on a low boil for about 20-30 min till potatoes are tender.

3Once potatoes are tender reduce heat to warm. Add cheese if desired. Mix 1/4 c. of masa to 1 c. of hot liquid from soup and mix well to remove lumps. REturn back to soup and mix in to thicken broth.
