Ingredients For great northern bean & kale soup

  • 8 oz
    mushrooms, sliced
  • 1 1/2 c
    onions, chopped
  • 1 c
    carrots, diced
  • 2 tsp
    dried thyme
  • 1 clove
    garlic, minced
  • 1/4 tsp
    crushed red pepper
  • 2 tsp
    oil
  • 7 c
    beef broth
  • 30 oz
    great northern beans, rinsed and drained
  • 3-4 c
    kale, sliced
  • 1/2 c
    quick cooking barley
  • 1 Tbsp
    lemon juice
  • salt and pepper, to taste

How To Make great northern bean & kale soup

  • 1
    Sauté mushrooms, onions, carrots, thyme, garlic and red pepper in oil until onions are tender, 10 minutes. Stir in remaining ingredients except lemon, salt and pepper. Bring to a boil; reduce to simmer, cover until barley is tender, about 15 minutes. Stir in lemon juice and season with salt and pepper.
