gluten free vegetarian dumpling soup

I was craving a hearty dumpling soup and due to my gluten allergy I couldn't use my regular dumpling recipe. So I did some research and came up with this delicious gluten free version. It defiantly hit the spot!

Ingredients For gluten free vegetarian dumpling soup

  • DUMPLINGS
  • 1 c
    a.p gluten free flour mix
  • 1 1/2 tsp
    xanthan gum
  • As Needed pinch
    mixed herb seasoning (fresh herbs if you like)
  • 2 md
    eggs
  • 1 Tbsp
    olive oil, extra virgin
  • 1/4 c
    water (or enough to make dough moist)
  • SOUP
  • 1/2 c
    medium diced celery
  • 1/2 c
    medium diced carrots
  • 1/2 c
    small diced white onions
  • 1 c
    shredded spinach
  • 2 clove
    minced garlic
  • 1 md
    small diced potato
  • 1-32oz can
    gluten free vegetable broth
  • 1 tsp
    apple cider vinegar
  • to season pinch
    salt and pepper

How To Make gluten free vegetarian dumpling soup

    For dumplings: Mix everything in a bowl with a fork until a nice wad of dough is made. Add water as needed so dough is slightly sticky to the touch.

    Soup: In a pot on medium low heat melt butter and saute onions,garlic,carrots,celery until onions are translucent in color than add the potatoes and spinach. Cook for another 2-3 minutes until spinach is slightly wilted.

    Add cider vinegar and stir, then add broth and bring to a boil stirring occasionally.

    Once it has come to a boil take dumpling dough and make small balls and drop them into the soup. They should float on the surface of the soup. After you have dropped them all in stir to ensure none have stuck to the bottom. Season with salt and pepper.

    Stick a lid on the pot and cook for another 15 to 20 minutes stirring occasionally.

    The soup should thicken some and the dumplings will sink a little.(this is an indicator of completion. )
