Ingredients For ginger garlic soup w noodles, bok choy & mushrooms

1 Tbspolive oil

1shallot chopped
-
4green onions chopped white and green parts separated

4 clovegarlic minced

2 Tbspfresh ginger grated

6 cchicken stock
-
2whole star anise
-
1 Tbspsoy sauce
-
1 Tbspfish sauce
-
8 ozcrimini mushrooms sliced

6 ozrice noodles

2baby bok choy chopped white and green parts separated
How To Make ginger garlic soup w noodles, bok choy & mushrooms

1Heat the oil in a stock pot and add the shallots and cook 3 minutes. Add the white parts of the green onions, ginger and garlic. Cook 2 more minutes.

2Add the chicken stock, star anise, soy sauce and fish sauce. Bring to a simmer and simmer 10 minutes.

3Remove the star anise and discard. Add the dry noodles, mushrooms and white parts of the bok choy. Cook about 8 minutes.

4Add the dark green leaves of the bok choy and cook 2 minutes.

5Ladle into bowls and garnish with green parts of scallion
