Ingredients For ginger garlic soup w noodles, bok choy & mushrooms

  • 1 Tbsp
    olive oil
  • 1
    shallot chopped
  • 4
    green onions chopped white and green parts separated
  • 4 clove
    garlic minced
  • 2 Tbsp
    fresh ginger grated
  • 6 c
    chicken stock
  • 2
    whole star anise
  • 1 Tbsp
    soy sauce
  • 1 Tbsp
    fish sauce
  • 8 oz
    crimini mushrooms sliced
  • 6 oz
    rice noodles
  • 2
    baby bok choy chopped white and green parts separated

How To Make ginger garlic soup w noodles, bok choy & mushrooms

    Heat the oil in a stock pot and add the shallots and cook 3 minutes. Add the white parts of the green onions, ginger and garlic. Cook 2 more minutes.

    Add the chicken stock, star anise, soy sauce and fish sauce. Bring to a simmer and simmer 10 minutes.

    Remove the star anise and discard. Add the dry noodles, mushrooms and white parts of the bok choy. Cook about 8 minutes.

    Add the dark green leaves of the bok choy and cook 2 minutes.

    Ladle into bowls and garnish with green parts of scallion
