I love to make gazpacho on a hot day. You can omit the shrimp but I think it makes the soup a little special.

Ingredients For gazpacho with shrimp

20 oz v8 juice
-
2 t. red wine vinegar

1 t. olive oil

2 t. cilantro,chopped
-
1/2 t. worcestershire sauce
-
1/4 t. liquid hot sauce
-
1 t. lime juice,fresh
-
1 c tomatoes, minced
-
1/2 c cucumber,seeded and minced
-
1/4 c celery,minced
-
1/4 c red onions,minced
-
1/4 c red,yellow or green bell peppers,minced

salt and pepper,to taste

1 c cooked small shrimp,shelled, deveined & chilled
How To Make gazpacho with shrimp

1Chill all ingredients. Mix V8 juice,vinegar,olive oil,worcestershire sauce,hot sauce and lime juice.Mix well. Chill at least 2 hours. When ready to serve,portion juice into 3 servings,add vegetables,stir. Season to taste with salt and pepper. Add shrimp on top.
