Ingredients For garden fresh minestrone

2 Tbspolive oil, light

1/2 ccelery, diced

1 conion, diced

4medium size garlic cloves, minced

8 cchicken stock
-
1/2 tspdried thyme
-
1bay leaf
-
1 tspsalt
-
2 czucchini, diced

3/4 cgreen beans, cut

3roma tomatoes, diced
-
1/2 cnavy beans, cooked

1/2 csmall dry pasta

freshly grated parmesan cheese
How To Make garden fresh minestrone

1In a large pot, sauté celery and onion in olive oil. Cook until softened, add garlic and cook for another minute.

2Now add chicken stock, salt, thyme and bay leaf. Bring to a simmer, and add the rest of your vegetables, beans, and pasta.

3Bring back up to a simmer, and cook until the vegetables are tender, and the pasta is cooked, about 10 to 12 minutes.

4Remove bay leaf and serve. Garnish with freshly grated Parmesan cheese. Enjoy!
