Ingredients For fresh tomato soup

1 Tbspcanola oil (can use vegetable oil also)

3/4 cminced onion

2 clovegarlic, minced
-
1 Tbspchopped fresh basil
-
1 tspminced thyme
-
5 cdiced tomatoes ( roma's are my preference)

1 1/2 cvegetable or chicken broth
-
2 tspsugar
-
salt & pepper to taste
-
2 1/2 Tbsptomato paste
How To Make fresh tomato soup

1In a large saucepan, heat the oil over medium heat. Add the onion, garlic, basil, and thyme. Cook, stirring frequently until the onions soften, about 5 minutes.

2Add the tomatoes and cook, for 5 minutes. Stir in the broth, tomato paste, and sugar. Season to taste with salt & pepper.

3Bring to a boil. Reduce the heat and simmer, uncovered for 15 minutes. Blend the soup in a blender until smooth. Ladle into bowls and garnish with additional basil.
