Ingredients For fresh tomato soup

  • 1/4 c
    butter, divided
  • 1 sm
    onion, chopped
  • 1 lb
    fresh tomatoes
  • 1
    bay leaf
  • 3 Tbsp
    flour
  • 2 1/2 c
    whole milk
  • salt and pepper, to taste

How To Make fresh tomato soup

  • 1
    Add half the butter to a large pot. Add the onion and saute for 6 minutes. Add the tomatoes and bay leaf. Cook for 15 minutes.

    Add the other half of the butter to a saucepan. Mix in the flour and cook for 1 minute. Slowly add the milk and cook until thickened.

    Remove the bay leaf from the tomato mixture. Place the tomatoes in a food processor and process until smooth. Press through a fine mesh strainer into a clean pan. Place over medium heat. Stir in the milk mixture. Cook for 3 minutes. Season with salt and pepper
