French onion soup is one of my favorite soups. I think the key to a great soup is the broth. I make my own beef broth by browning bones them cooking them with lot's of vegetables. I also love the addition of homemade mushroom broth as it makes the soup so flavorful. I also like to add a little mustard to the garlic toast for flavor, I had this at a restaurant and began making mine this way.

Ingredients For lad's french onion soup

6 large yellow onions

olive oil
-
2 cloves garlic,minced

8 cups beef stock

1 cup mushroom broth

1/2 c dry white wine
-
1 bay leaf
-
1/4 teaspoon thyme

salt and pepper

8 slices italian or french bread,cut in 1 inch cubes

1/4 c garlic butter
-
dijon mustard
-
1 1/2 c grated gruyere cheese
-
1/2 c freshly grated parmesan cheese
How To Make lad's french onion soup

1In a large saucepan, sauté the onions in the olive oil on medium high heat until well browned, do not burn, about 30-40 minutes. Add garlic and sauté for 1 minute. Add the stock,mushroom broth, wine, bay leaf, and thyme. Cover and simmer until the flavors are well blended, about 30 minutes. Season to taste with salt and pepper. Toss the bay leaf. To serve,preheat broiler until hot. Lightly butter bread with garlic butter. Lightly toast bread . Spread toast lightly with mustard. Using individual oven-proof soup bowls . Ladle the soup into the bowls. Cover with bread and sprinkle with cheese. Put into the broiler until the cheese bubbles and is slightly browned. Serve immediately.
