Ingredients For five onion soup

3 lgleeks white portions only cleaned well and sliced

1 lgvidalia onions rough chop

1 lgred onion rough chop

4 lgshallots rough chop

1 bunchscallions white parts only

4 clovegarlic minced

6 cbeef stock

1/2 cdry sherry

2 tspthyme leaves

salt to taste

shredded mozzarella cheese (optional)
How To Make five onion soup

1Place the oil in a large stock pot. Add all the onions and cook stirring for about 20 minutes until carmalized. Add the garlic and cook 1 more minute.

2Add the dry sherry and let most evaporate. Add the stock. With an immersion blender blend the onions a bit to make the soup thicker. Add the thyme.

3Taste and season with salt. Top with mozzarella cheese if desired.
