Ingredients For five onion soup

  • 3 lg
    leeks white portions only cleaned well and sliced
  • 1 lg
    vidalia onions rough chop
  • 1 lg
    red onion rough chop
  • 4 lg
    shallots rough chop
  • 1 bunch
    scallions white parts only
  • 2 Tbsp
    olive oil
  • 4 clove
    garlic minced
  • 6 c
    beef stock
  • 1/2 c
    dry sherry
  • 2 tsp
    thyme leaves
  • salt to taste
  • shredded mozzarella cheese (optional)

How To Make five onion soup

  • 1
    Place the oil in a large stock pot. Add all the onions and cook stirring for about 20 minutes until carmalized. Add the garlic and cook 1 more minute.

    Add the dry sherry and let most evaporate. Add the stock. With an immersion blender blend the onions a bit to make the soup thicker. Add the thyme.

    Taste and season with salt. Top with mozzarella cheese if desired.
