I never would have thought that instant potatoes would work so well as a thickener, but they sure do. This is a nice, easy, creamy soup without all the fat. The recipe is very basic, so you may want to add additional seasonings of your choice.

10 ozmixed vegetables, frozen

3 cmilk
-
2 cwater

3 Tbsponion, instant minced

2 tspchicken bouillon granules

2 tspsalt

1/4 ccelery, finely chopped

1 1/3 cinstant mashed potato flakes
How To Make fast and creamy vegetable soup

1Cook vegetables according to package directions... but to just UNDER done; drain and set aside.

2Heat to boiling in large saucepan milk, water, minced onion, bouillon granules, salt and celery.

3Remove from heat and stir in instant mashed potato flakes.

4Heat to boiling, stirring constantly.

5Reduce heat to LOW and add in cooked vegetables. Let simmer until veggies are heated through.
