This recipe makes about 3 quarts of this fantastic chowder. I like to make it and give it out to some of my friends. Really good with some crusty bread or crackers. Either way, share the wealth on cold winter day with this cheesy veggie chowder.

Ingredients For easy vegetable chowder

22new potatoes (10 pounds)

4 lgcarrots

2 lgonions

6 Tbspolive oil

4 can(10 3/4oz each) cheddar cheese soup,undiluted

8 cwater

2 pkg(1.15 oz each) dry onion soup mix

2 tsppepper

1 cslice green onions
How To Make easy vegetable chowder

1Cut potatoes into 1/2 inch cubes and carrots into 1/2 inch slices; coarsely chop onion.

2Saute veggies in hot oil in Dutch oven until tender

3Stir together Cheddar cheese soup, water, soup mix and pepper until blended; add to vegetable mixture. Bring to a boil; reduce heat and simmer for 30 minutes. Stir in 1 cup sliced green onions and remove from heat. Cool; package in 3 quart size jars for gift giving or just do what you please. Can be chilled for up to 24 hours.
