One day I had all this stuff in my refrigerator and pantry and I thought, "what can I make that is really healthy"? Well.... this is what I came up with. My husband loves it! It's a great soup any time of the year!

Ingredients For curried lentil soup

1 largered onion, chopped

4 or 5stalks of celery, chopped

4carrots, chopped
-
2ears of corn or 1 small can of corn

4 clovegarlic, minced

1 1/4 colive oil
-
2 clentils, dry
-
1 qtchicken broth, low salt
-
3 or 4 cwater
-
2links of smoked turkey sausage, sliced

1 tspcurry powder
-
1 tspturmeric, ground
-
1 Tbspsea salt or taste to your liking

1 bunchhandful of chard or spinach for the greenery
How To Make curried lentil soup

1Chop all vegetables and saute in olive oil for about 5 to 8 minutes. Add chicken broth.

2Then add lentils and water. Bring to a boil for one minute then simmer for 45 minutes to 1 hour.

3While simmering for the last 15 minutes, add turkey, curry, turmeric, greens, and sea salt.
