this takes a little time to do but is worth it when done...... a good way to use all the cukes from veggie garden too........ it keeps in fridge well too!!!!

Ingredients For cucumber soup

  • 6-8 lg
    cucumbers,grated
  • 1 lg
    red pepper,grated
  • 1 bunch
    green onions,chopped fine
  • 1 qt
    white vinegar
  • 1/2 c
    sea salt
  • 1 c
    sugar
  • several dash
    hot sauce

How To Make cucumber soup

    put all in lg glass bowl stir well to disolve salt and sugar put in fridge keep in fridge 48 hrs stirrin once an hr duriing walkin hrs....

    after 48 hrs drain well keep juice....... put cukes into blender blend til smooth.... add juice to make soup concistancy[may add ice cold water if to viegary for ya] chill well serve with green onion as stirrer

    this is great to have at picnic or when sittin pool side in the summer!!!!!
