This soup is a combination of fruit and vegies and it can be made with canned pumpkin or use raw pumpkin cooked and mashed.but the canned is very good and less fuss.

4 cchicken or vegetable broth

2 cpeeled and chopped potatoes

2apples, peeled and rough chopped

1 can15oz solid packed pumpkin

2 cmilk

1/2 tspnutmeg

1 csour cream

1 Tbspchopped fresh parsley

1 Tbspgrated fresh ginger

4 sliceside bacon fried crisp and crumbled
How To Make creamy pumpkin soup

1In large saucepan fry onion in butter until tender add the broth and potatoes, apples and pumpkin and cook until potatoes are tender about 15 to 20 minutes.Remove and cool slightly...Puree and return to pot and add the ginger and simmer another 5 minutes.

2In small bowl, combine the sour cream and parsley..Spoon soup into bowls and top with dollop of sour cream and sprinkle with crisp bacon.
