Cup of Soup anyone?. . This EZ recipe will make a CUP of Soup anytime for one. This is a Personal "ORIGINAL" I make for Myself when I want something Hot and Norishng. Great if Living alone.

Ingredients For cream of tomato soup for 1, by freda

  • TO MAKE THICKENING; OR RUE
  • 1 TBS
    butter
  • 1 tsp
    flour
  • ADD THE FOLLOWING TO RUE
  • 1 Sm
    (5 oz) can v-8 juice
  • 2 Tsp
    sugar
  • 1
    (5oz) can of milk ( i use the empty v-8 can)
  • 4 TBS
    heavy cream
  • salt and pepper to taste

How To Make cream of tomato soup for 1, by freda

    In small saucepan, over med Heat. Melt Butter, Add flour, Mix into a rue,

    Add V-8 juice, Bring to Boil. Add sugar, Add Milk, heat only until hot. ( do not Boil) Reduce Heat to Simmer. Add Cream, and remove from Heat. Season with Salt and Pepper to taste. NOTE: Makin the Rue is "Not Necessary" if you choose to have a thinner type of Soup.( as in Photo above) For the "Thicker type of soup", please make the RUE, and follow directons exactly. ENJOY A CUP OF NOURISHING SOUP. So good to Drink your Hot Soup from a Cup!!
