Ingredients For cream of tomato soup

18tomatoes, diced

2 eachcarrot, finely diced

2 eachonion, finely diced

3 eachgarlic, crushed fine

3 eachleeks, finely diced

6 Tbspbutter

3 qtchicken stock, or chicken water

2 Tbspwhite pepper
-
1 Tbspsalt
-
1 Tbspsugar

9 Tbspflour
-
1 qtheavy cream
How To Make cream of tomato soup

1Saute until mushy.

2Saute to make a roux (flour 9 T).

3Add the chicken stock or chicken base and water, white pepper, salt, and sugar. Bring to a simmer.

4Add the 1-quart of heavy cream.

5May need to adjust thickening by adding cornstarch and water.
