cream of spinach soup

I was very sick back in the late 70's with stomach problems, I couldn't eat much at the time..and a friend of mine made this soup for me. It was so wonderful, I had to have the recipe. I have been making it ever since.

Ingredients For cream of spinach soup

  • 6 Tbsp
    butter
  • 1/4 c
    onion, chopped
  • 1/4 c
    celery, chopped
  • 1/3 c
    flour
  • 1
    10 ounce pkg. of frozen chopped spinach**see below
  • 4
    chicken boullion cubes
  • 4 1/2 c
    milk
  • salt & pepper

How To Make cream of spinach soup

  • 1
    Melt butter over medium heat. Add onion and celery and saute 3 to 4 minutes. Remove from heat and stir in flour, mix well. Add remaining ingredients, mix well. Cook over med-low heat stirring frequently for 20 to 25 minutes or until soup has thickened. Salt and pepper to taste.

    **Rinse spinach with water water to thaw, drain before putting into soup mixture
