Ingredients For cream of broccoli soup

  • 2 Tbsp
    shallots or onion, finely diced
  • 4 lb
    broccoli, chopped, fresh
  • 1 c
    butter
  • 1 c
    flour
  • 1/2 c
    chicken base diluted with 1 1/2 cup of water
  • 1 tsp
    pepper
  • 1 tsp
    thyme, ground
  • 1 gal
    milk
  • 2 qt
    heavy cream

How To Make cream of broccoli soup

  • 1
    Saute until tender (al dente).
  • 2
    Add chicken base, white pepper, thyme, and milk.
  • 3
    Add heavy cream. NOTE: May need to adjust by adding cornstarch and water.
