I created this recipe as my kids love cucumbers in any form. This has been a summertime staple in our house every summer. If you have an overabundance of home grown cucs, this is the recipe for you. Its absolutely delicious and we never grow tired of it. Enjoy!

Ingredients For cool as a cucumber soup

  • 3 lg
    english cucumbers or regular cucumbers, seeded
  • 1 c
    light sour cream
  • 1 1/2 c
    low fat buttermilk
  • 2 sprig
    fresh dill
  • 1 sprig
    fresh mint
  • 1/2 tsp
    salt
  • 1/4 tsp
    cayenne pepper or to taste
  • 1/4 tsp
    pepper

How To Make cool as a cucumber soup

  • 1
    Puree all ingredients in a food processor. Chill and serve.
