Ingredients For chunky tomato basil soup

1 Tbspolive oil
-
1 mdonion, chopped
-
2 stalkcelery, chopped
-
1 mdcarrot, chopped
-
2 clovegarlic, minced
-
2 can(14.5 oz.ea.) diced tomatoes, undrained

1 tspdried basil, crumbled
-
3 creduced sodium chicken broth
-
salt and black pepper to taste

8fresh basil leaves, julienned
How To Make chunky tomato basil soup

1In a large saucepan over medium-high heat, add oil and saute onion, celery, and carrots until tender, about 5 minutes. Add garlic and cook another minute.

2Add the diced tomatoes, dried basil, and chicken broth and bring to a boil.

3Reduce heat to low and simmer for 15 minutes or until vegetables are soft.

4Ladle into bowls and garnish with fresh julienned basil. Serve hot.
